Triple Chocolate Brownie Cookies
Ingredients:
- 115g butter, at room temperature
- 1 cup all purpose flour
- 1/3 cup extra dark, unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 225g bittersweet chocolate, chopped (e.g. 53% cacao)
- 1 cup firmly packed light brown sugar
- 2 large eggs
- 2/3 cup white chocolate bits
- 1/3 cup milk chocolate bits
Instructions:
- Melt bittersweet chocolate in a double-boiler and set aside to cool
- Preheat oven to 175 degrees
- Sift flower, baking soda, salt and cocoa
- Cream butter and brown sugar
- Add eggs and beat well after each addition
- Add chocolate mixture and blend until uniform
- Add powered ingredients, half at a time on low speed until incorporated
- Add chocolate bits and stir in by hand
- Drop spoonfuls onto a baking sheet, allowing room to spread
- Bake 10 minutes, until puffy and crispy on the edges
