Carrot Cake
Ingredients:
- 3 cups flour
- 2 tsp baking powder
- 3 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 2 cups sugar
- 1 1/2 cups vegetable oil
- 3 cups grated carrot
- 1/2 cup drained crushed pineapple
- 4 eggs
- 1/2 cup chopped pecans or walnuts
Icing Ingredients:
- 90g cream cheese
- 4 tbsp butter
- 2 cups icing sugar
- 1 tsp lemon juice
Instructions:
- Preheat oven to 175. Grease and flour a cake tin.
- Sift flour with baking powder, baking soda, salt & cinnamon.
- In another bowl mix sugar and oil. Add the carrots.
- Add eggs one at a time to the carrot mixture, beating well after each egg. Fold in the nuts then gradually add the flour mixture.
- Bake for 1 hour. Done when toothpick inserted in centre comes out clean.
