Carrot Cake

Recipes

Ingredients:

  • 3 cups flour
  • 2 tsp baking powder
  • 3 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 3 cups grated carrot
  • 1/2 cup drained crushed pineapple
  • 4 eggs
  • 1/2 cup chopped pecans or walnuts

Icing Ingredients:

  • 90g cream cheese
  • 4 tbsp butter
  • 2 cups icing sugar
  • 1 tsp lemon juice

Instructions:

  1. Preheat oven to 175.  Grease and flour a cake tin.
  2. Sift flour with baking powder, baking soda, salt & cinnamon.
  3. In another bowl mix sugar and oil. Add the carrots.
  4. Add eggs one at a time to the carrot mixture, beating well after each egg.  Fold in the nuts then gradually add the flour mixture.
  5. Bake for 1 hour.  Done when toothpick inserted in centre comes out clean.

Triple Chocolate Brownie Cookies

Ingredients:

  • 115g butter, at room temperature
  • 1 cup all purpose flour
  • 1/3 cup extra dark, unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 225g bittersweet chocolate, chopped (e.g. 53% cacao)
  • 1 cup firmly packed light brown sugar
  • 2 large eggs
  • 2/3 cup white chocolate bits
  • 1/3 cup milk chocolate bits

Instructions:

  1. Melt bittersweet chocolate in a double-boiler and set aside to cool
  2. Preheat oven to 175 degrees
  3. Sift flower, baking soda, salt and cocoa
  4. Cream butter and brown sugar
  5. Add eggs and beat well after each addition
  6. Add chocolate mixture and blend until uniform
  7. Add powered ingredients, half at a time on low speed until incorporated
  8. Add chocolate bits and stir in by hand
  9. Drop spoonfuls onto a baking sheet, allowing room to spread
  10. Bake 10 minutes, until puffy and crispy on the edges

German Apple Cake

Ingredients

  • 2 eggs
  • 1 cup vegetable oil
  • 2 cups white sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 4 cups apples – peeled, cored and diced

Instructions

  1. Preheat oven to 175 degrees. Grease and flour one 9×13 inch cake pan.
    In a mixing bowl; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well.
  2. Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick.
  3. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan.
  4. Bake at 175 degrees for 45 minutes or until cake tests done. Let cake cool on a wire rack.
  5. Once cake is cool serve with a dusting of confectioners’ sugar or with a Caramel Glaze: 1/2 cup butter, 1/2 c. brown sugar, and 1/4 c. cream. Bring to a boil, then boil 3 minutes. Remove from heat and add 1/2 tsp. vanilla. Let cool just slightly before pouring over warm cake.

Recipe: Sweet & Sour Meatballs

I was clearing out some bits of paper, and found this recipe for Sweet & Sour Meatballs.  I don’t want to hang on to it forever, so thought I would archive it on here.

Meatballs:

  • 500g mince
  • 2 tsp beef stock
  • 1 onion, finely chopped
  • 1/2 tsp garlic salt
  • 2 tbsp breadcrumbs
  • 1/4 cup milk

Mix all ingredients together and then form into small balls.  Start browning the balls in a frypan while you mix up the sauce.

Sauce:

  • 1 medium tin crushed pineapple
  • 1/2 cup water
  • 1 tbsp soy sauce
  • 2 tbsp vinegar
  • 1/4 cup sugar
  • 1/2 tsp ground ginger
  • cornflour to thicken

Mix all ingredients together and pour over meatballs once they are browned.   Simmer until meatballs are fully cooked and sauce has thickened.
